
HUMMINGBIRD CAKE

Combine:
3 cups of flour
2 cups of sugar
1 tsp baking soda
1 tsp salt
Add:
4 beaten eggs
1 cup of oil
MIX BY HAND
1 1/2 tsp of vanilla
1-20 oz can crushed pineapple
4 1/2 cups of chopped, ripened bananas
1 cup of chopped pecans.
Combine dry ingredients. Add oil and eggs. Mix by hand until moist, don't beat. Stir in vanilla, pineapple w/ juice, bananas and nuts. Pour into two 9 inch round or large 11x 15 cake pan. Bake at 350 for 45 minutes. Let cool.
Frosting:
1 8 oz pkg of cream cheese
1 stick of butter
1 tsp vanilla
1 cup chopped nuts
Blend cream cheese and butter together, add powdered sugar and beat until smooth. Add vanilla. Stir nuts or sprinkle on top.
